Tuna fillets au naturel – 200g

The tuna, taken from the cold store, is cut into slices, bled in running water, placed in AISI 316 stainless steel baskets and cooked not in steam but in water and salt so as to maintain its organoleptic qualities intact and not to lose most of its proteins. After cooking, the product is cooled and, by hand, meticulous skinning and removal of the bones is carried out. The cleaned slices are then cut into fillets and placed inside glass jars of different sizes or in large jars for catering use. This phase is followed by the filling of the containers with olive oil or water, if the product is required in its natural state, the closing of the lid with an automatic capping machine, the sterilisation and washing of the packages. The last step is the labelling of the jars with an automatic labelling machine, the packing of the containers in thermo packs and storage in special rooms.
