The Campisi dried cherry tomato is dried in the sun, as the ancient tradition requires. After being carefully selected and cut, the tomato is salted and exposed to the direct sunlight of our Sicily. The drying process is gradual. It is then preserved in oil. This recipe, derived from the culinary culture of our region, allows us to enjoy the wonderful flavour of these fruits of the earth even during the winter months.
