Senatore Cappelli wheat is an ancient variety of durum wheat, created in the 1920s by the Italian farmer and researcher Raffaele Cappelli. Senatore Cappelli wheat was created by crossing local varieties of durum wheat with American varieties, to obtain a plant resistant to disease and climate, but also with a high yield and high seed quality. Senatore Cappelli wheat is characterized by a high protein and gluten content, which make it particularly suitable for the production of pasta and bread.
