Semolina flour is a type of durum wheat flour, obtained by grinding durum wheat grains. It has a high protein and gluten content, and is mainly used for the production of fresh pasta and bread. The texture is coarser than soft wheat flour and gives the pasta greater crunchiness and resistance to cooking.
